Аннотация

Физиологические функции различных пребиотиков в значительной степени зависят от их физико-химических характеристик, одной из которых является растворимость. По сравнению с нерастворимыми пищевыми волокнами (ПВ), растворимые ПВ могут легко усваиваться и метаболизироваться микроорганизмами, расщепляющими клетчатку в кишечнике, и вырабатывать ряд полезных и функциональных метаболитов.

Настоящее информационно-аналитическое исследование посвящено анализу и систематизации современных научных представлений о растворимых ПВ (олиго- и полисахаридах) как пребиотиках углеводной природы. Одной из задач исследования является также оценка возможности и целесообразности использования отдельных групп растворимых ПВ для разработки напитков с пребиотическими свойствами на основе опыта ТМ.

По результатам настоящего исследования, к наиболее перспективным натуральным растворимым пребиотикам углеводной природы можно отнести такие группы ПВ, как короткоцепочечные фруктоолигосахариды (3–7 мономеров), галакто-олигосахариды, низкомолекулярные инулины (средняя степень полимеризации не выше 10), гидролизаты маннанов, а также растворимые сухие экстракты из ряда растений и грибов, содержащих растворимые ПВ с доказанным пребиотическим, антидиабетическим, иммунотропным и другими видами действия.

Выявленные группы БАВ могут являться перспективными микронутриентами для создания натуральных практически безвредных биологически доступных напитков с пребиотическими свойствами.
